Preheat oven to 350 degrees F.
Heat olive oil over medium high heat in 12 inch skillet.
Coo oakley outlet k sausage for 5 to 7 minutes until browned. Add onions and celery and saute until softened. Add salt and pepper, to taste. Mix in apples, thyme and sage and saute for another 2 minutes. Add bourbon. Cook’s Note: When adding alcohol take pan off flame. Allow to simmer until bourbon is almost evaporated; 1 to 2 minutes.
In a large bowl, add cornbread stuffing, parsley, chicken stock, eggs and pecans. Mix well. Mix in vegetable mixture to bowl. Combine and stir well together. Add to a large casserole dish and bake for 30 minutes.

Crockpot Rosemary Honey Sweet Potatoes
3 or 4 darker red yams, peeled and cut into cubes or small ch oakley outlet unky slices
3 tablespoons oliv oakley outlet e oil
1/4 cup honey
1/4 cup orange juice
1 to 2 tablespoons fresh rosemary, chopped fine (to taste, crockpot makes flavors stronger)
1/2 teaspoon sea salt
1/2 te oakley outlet aspoon black pepperSpray the inside of a 4 quart round slow cooker with cooking spray. Put all ingredients directly into the crock, toss to mix, cover and cook on high for approx 3 hours on High or approx 7 hours on Low. Toss once or twice during cooking and test for doneness. You can prep this and refrigerate the day before without adding the honey and OJ add those just before cooking.
